4 slices bacon
1/2 cup chopped onion
32 oz pork-n-beans (canned)
2 Tbsp brown sugar
2 Tbsp ketchup
1 Tbsp worcestershire sauce
1 Tbsp prepared mustard
Cook bacon til crisp. Romove bacon, reserving 3 Tbsp drippings in skillet.
Crumble bacon and set aside.
Cook onions in drippings til tender.
Stir in pork-n-beans, sugar, ketchup, & mustard. Turn into 1-1/2 qt casserole dish.
Bake uncovered at 350 degrees for 1-1/2 - 1-3/4 hours.

1 can artichoke hearts (not heart of palms)
1 cup parmesan cheese1 cup mayonnaise2 cloves pressed garlicsprinkle garlic powderpaprika
Drain artichoke hearts and cut into small pieces.
Mix all ingredients and turn out into flat casserole dish. Sprinkle with paprika.
Bake at 350 for 20-25 minutes.

Journaling:
One of our food traditions comes directly from our Southern heritage. Every New Year's Day, Rick is sure to be cooking a big batch of collard greens. I usually round out the meal with a pork loin, ham, or my special version of Southern Bar-B-Q, a hoppin' john mixture of black-eyed peas and rice, and my mother's homemade cornbread recipe!

Strip Journaling:
We arrived in the tiny port town of Whittier, the embarkation point of our seven day cruise. Since the ship did not leave port until late in the day, we had reserved a spot on the 6-hour glacier cruise…and it couldn’t have been a more beautiful day.
Clear blue sky, sunshine, and cool, crisp temperatures…
We cruised the spectacular Esther Passage, got a unique view of a working salmon hatchery, saw towering glaciers in Harriman Fjord and Barry Arm, enjoyed varied and plentiful wildlife, as well as a mouth-watering Alaskan King Crab cake lunch.
