Easy Baked Beans

4 slices bacon
1/2 cup chopped onion
32 oz pork-n-beans (canned)
2 Tbsp brown sugar
2 Tbsp ketchup
1 Tbsp worcestershire sauce
1 Tbsp prepared mustard
Cook bacon til crisp. Romove bacon, reserving 3 Tbsp drippings in skillet.
Crumble bacon and set aside.
Cook onions in drippings til tender.
Stir in pork-n-beans, sugar, ketchup, & mustard. Turn into 1-1/2 qt casserole dish.
Bake uncovered at 350 degrees for 1-1/2 - 1-3/4 hours.

Artichoke Dip

1 can artichoke hearts (not heart of palms)
1 cup parmesan cheese1 cup mayonnaise2 cloves pressed garlicsprinkle garlic powderpaprika
Drain artichoke hearts and cut into small pieces.
Mix all ingredients and turn out into flat casserole dish. Sprinkle with paprika.
Bake at 350 for 20-25 minutes.
Serve immediately with crackers.

1/4 cup chopped onion2 Tbsp butter/margarine2 - 10 oz pkgs Bird's Eye broccoli w/cheese sauce2 cups chicken broth1/2 cup heavy cream1/8 tsp white pepper
Cook broccoli & cheese; chop in food processor.
Saute onion in butter til tender, but not browned.
Add broccoli & sauce, broth, cream, and pepper.

2 cups sugar1/2 cup water1/2 cup corn syrupdash of salt2 egg whites1 tsp vanilla

Boil sugar, syrup, water & salt in heavy saucepan. Continue cooking until mixture forms soft ball when tested in cold water (or use a thermometer). In the meantime, beat egg whites until stiff. Then pour 1/2 of syrup mixture over whites, beating fast all the time.
Continue to cook remaining syrup while beating egg whites, until syrup reaches the light crack stage when dropped in cold water (this will happen quickly). Pour remaining syrup over egg white mixture, beating all the while. Continue beating until candy begins to hold... » Read More

I thought this would be an appropriate layout to share for the New Year!
Journaling:
One of our food traditions comes directly from our Southern heritage. Every New Year's Day, Rick is sure to be cooking a big batch of collard greens. I usually round out the meal with a pork loin, ham, or my special version of Southern Bar-B-Q, a hoppin' john mixture of black-eyed peas and rice, and my mother's homemade cornbread recipe!

3/4 cup sugar2 eggs1 Tbsp lemon juice1 tsp vanilla12-16 vanilla wafers1 - 20 oz can fruit filling Preheat oven to 350.Line muffin tin with cupcake liner. We arrived in the tiny port town of Whittier, the embarkation point of our seven day cruise. Since the ship did not leave port until late in the day, we had reserved a spot on the 6-hour glacier cruise…and it couldn’t have been a more beautiful day.
Clear blue sky, sunshine, and cool, crisp temperatures…
We cruised the spectacular Esther Passage, got a unique view of a working salmon hatchery, saw towering glaciers in Harriman Fjord and Barry Arm, enjoyed varied and plentiful wildlife, as well as a mouth-watering Alaskan King Crab cake lunch.
