1/2 lb butter

3/4 lb extra sharp cheese

2 eggs

2-1/2 cups plain flour

1/2 tsp salt

1/4 tsp red pepper

 

Set out butter & cheese until room temperature.

Mix grated cheese & butter with mixer til fluffy; add eggs.

Mix flour, salt & pepper. Add into wet mixture and stir til blended.

Bake at 350 til edges begin to lightly brown.

Store in tin. Best after sitting.

TIP***Shred your own cheese. It's stickier and mixes better than pre-shredded cheese.
