The scientific name for crab (Callienectes) means 'Beautiful Swimmer' in Greek. The name is particularly apt for the Atlantic or Chesapeake blue crab (Callienectes sapidus). In the wild, the crab is blue to green with lighter colored legs and red to orange markings on the tips of the claws. On the plate, this crab is also very tasty. So tasty that 'sapdius', Latin for 'savory', was included in its full name. The blue crab has become a symbol for the state of Maryland and its regional cuisine. If you visit any seafood restaurant in Baltimore, the blue crab will be on the menu. Though once it gets to your plate, the crab will be orange or red, as the shell changes color once it is cooked.
