Did you know that August 2 is National Ice Cream Sandwich Day? If you want to step up your game, let us give you some ice cream sandwich inspiration.
A classic cookie used to make a classic treat! Bake a batch of your favorite Chocolate Chip Cookies, let them cool, and add a scoop of your favorite ice cream (ice cream that has been left out for a few minutes to soften works best). Then roll the sides in mini chocolate chips. You can eat them right away or wrap them in plastic wrap, throw them in the freezer, and enjoy them later.
Line a 10×15 jelly roll pan with foil up along the bottom and up the sides (be sure you have enough hanging over the sides to allow you to lift the brownies out of the pan later). Whip up your favorite brownie mix and bake as directed. Let them cool completely, lift the foil, and cut the brownies into 24 equal pieces. Put a scoop of ice cream on 12 of the pieces and then top them with the other pieces. Enjoy!
Pizzelle Ice Cream Sandwich
If you have never had a pizzelle, you are missing out. Think waffle cone, but flat. These delectable cookies are the perfect vessel for ice cream sandwiches! And if you really want to get crazy, try smearing some Nutella on one (or both!) of the cookies before adding the ice cream. Or you could even dip the sandwich in melted chocolate. Yum!
Churro Ice Cream Sandwich
My very favorite treat that I have ever had at Disneyland is the Churro Ice Cream Sandwich from the California Churro Company. To make a version of these amazing treats, find a churro recipe you love, but instead of piping the dough into the oil, pipe them into a spiral shape onto a cookie sheet lined with parchment paper. Pop them in the freezer for a couple hours and THEN fry them. Sprinkle them with cinnamon and sugar, let them cool, then top with ice cream. Sooo good!
