The Greek white kidney beans, of Prespa - Florina (Greece), is a traditional Greek food, used in several Greek gourmet recipes, such as bean soup, baked beans in Greek salad, etc. Undoubtedly they are a healthy, natural food and favorably place themselves in a Mediterranean diet.
Originally cultivated in Argentina and beloved in Italy, Cannellini beans are also known as white kidney beans. With a mild, nutty flavor and creamy texture, these ivory legumes are versatile - enjoy in soups, salads and pasta dishes.
White kidney beans, lingot beans, cannelloni, white coco, asparagus beans, 100% natural, this is not a hybrid,All of our seeds are Tested & Packaged for 2013/14 Season. Germination: 80% or better.

Cannellini beans are preferred by chefs for its smooth, rich and nutty flavor.

Cannellini beans are my favorites, pure and simple. Whatever fresh shelling bean you have can be fully cooked in 30 minutes, give or take, depending on how dry they are. When they're fresh from the shell, no soaking is required. Just cover with ample water. I always throw in some onion, rosemary & a bay leaf, and simmer gently. Check on them after a half an hour and give a little taste test. Experts say to salt them after they're cooked instead of adding salt to the water. After a pot or two that never seemed to soften, I always follow this advice and have had great results.

Minestrone Soup Recipe

Ingredients:

1 1/2 cups cooked fresh shelled beans, I used cannellini beans, covered with water and gently simmered for 35 minutes.

1/4 lb chopped prosciutto, bacon or pancetta

1/4 cup olive oil

1 large onion, chopped

1 large carrot, chopped

3 garlic cloves, finely chopped

3 small zucchini, chopped

Handful green beans, cut in 1? pieces

3 small potatoes, chopped

5 tomatoes, chopped

Several handfuls of kale, stems removed and chopped

4 cups chicken broth

Leftover cooked pasta, room temperature. ( I used penne)

Loads of grated parmesan cheese

Salt & pepper

Directions:

In a large soup pot, heat the olive oil and cook the prosciutto over medium heat, stirring until it begins to brown and get crispy. Add the onions and cook until they soften. Turn the heat down to medium low, add the carrots, garlic and potatoes, continue to stir to coat with oil and cook for 5 to 10 minutes.

Add the tomatoes and chicken broth, cover and simmer very gently for up to an hour.

Remove from the heat, add cooked shell beans, green beans, zucchini and kale to the warm broth. (I like these veggies crisp and just barely cooked. If you want them softer, simmer for several more minutes). Add the leftover pasta and put the pot on low heat to warm it all up.

Season to taste with salt and pepper. Serve with grated parmesan cheese on top.

Planting Tips for Heirloom Beans:

50-60 days for green, 100+ days for dry beans. Not cold tolerant, beans need warm soil of 65° or higher. Grows best in full sun with well watered soil. Regular harvesting of the young pods will ensure a greater yield. Boost yields and germination by adding inoculants.

Avoid planting in soil that stays wet. Heirloom bean disease thrive in wet conditions, and the roots may not get enough oxygen.

Heirloom beans like soil that is slightly acid, about 6.5. This can be achieved by adding mulched pine needles, peat moss or sulfur.

Try wide row growing for bush beans. Make your heirloom bean rows three across instead of just one. Three wide is perfect because most people can reach across that width. You can grow 3 times the amount of heirloom beans in the same space, you reduce the amount of area for weeds, and you'll save on water.

Heirloom seeds are hardy but always take care with your garden seeds to give them the appropriate amount of moisture - not letting the vegetable seeds dry out prematurely or overwatering and possibly having them rot.
